  1. Soak rice for 20 minutes.

  2. Heat oil fry onion untill they are golden brown take out and spread on paper after gets crispy, grind them.

  3. Add ginger garlic paste fry till smell remove properly,add all whole garam masala add chicken fry a while add fried onion, yogurt, tomatoes, prunello cook till chicken tender properly now add badyan powder, nutmeg & mace powder and essence remove from stove.

  4. LAYERS: Boil rice in a large vessel add a few mint leaves, whole condiments and 1 lemon's juice.

  5. When rice half-done throw water .

  6. Divide rice & chicken into three parts, Now in another large vessel spread one layer of rice ,on layer spread one part of chicken,sprinkle food colour , mint leaves, green chilies,lemon slices do same twice more and on lower blaze steam rice for 20 mins.

  7. Serve hot with raita and salad.



  • Rice 1 kg
  • Chicken 1 kg
  • Onion 5-6 medium (cut finly)
  • Ginger garlic paste 4 tbsp (heaped)
  • Red chili powder 2 tsp
  • Gram masala pwd 1 tsp
  • Pounded chili 1 tsp
  • Black peper powder 1/2 tsp
  • Turmeric pwd 1tsp
  • Coriander pwd 3 tbsp full
  • Salt to taste
  • Bay leaves 2
  • Cummin seed 1 tsp
  • Nutmeg & mace pwd 1/2 tsp
  • Badyan powder 1/2 tsp
  • yogurt 1/2 pao
  • Tomatoes 6 large
  • Prunello (aalobukhara) 7,8
  • Oil 1 cup
  • Whole garam masala 2 green cardamom,2brown cardamom 3 cloves,3 black pepper,2 cinnamon stick
  • Biryani essence 1-2 drop
  • Green chillies 5,6 (cut vertically)
  • Mint leaves a bunch
  • Lemon 1 (Slices)
  • Yellow food colour 1/2tsp in each layer
  • PREP 20 min
  • COOK 1 h 30 min
  • READY IN 1 h 40 min
  • SERVINGS 5 to 6
