Irish Potato Soup

Directions

Wash the potatoes, remove the skin and cut them into fair sized pieces. Chop finely and simmer the onions in a little water in a large pan on low heat. Do not let them become brown. Add the remaining water and milk, the potatoes and the parsley into the pan, and salt to taste. Cook until the potatoes are soft. Put the soup through a food processor or mill and reheat in the pan.

Serving

Serve the potato soup with croutons. If it is a special occasion you can also garnish with some and cream. But remember, cream is quite high in fat and cholesterol so don't make it a habit to eat your potato soup with cream every time. Reserve it for special occasions. The soup tastes just as good with croutons alone. Alternatively, serve the soup some hearty brown wheaten bread.

2 large onions

4 cups of milk

4 cups of water

4 tablespoons parsley

Salt to taste
